Pastel de nata with homemade laminated dough

A rainy Saturday project. The swirly pastry layers are so satisfying to see after baking.

Dough: 200 g flour, 120 ml water, pinch salt
180 g soft butter
Custard: 300 ml milk, 30 g flour, 220 g sugar, 120 ml water, 6 yolks, cinnamon, lemon peel

Make a soft dough, rest 15 minutes, roll very thin.
Spread a third of the butter, roll up like a Swiss roll, repeat twice with stretching. Chill 2 hours.
Make the custard: milk with flour, sugar syrup, then yolks.
Cut the log into discs, press up the sides of muffin cups.
Fill and bake at 260°C for 13 minutes.
